Roasted Figs
with Parma Ham

The delicate flavour of Parma ham is a perfect pairing with figs.
A heavenly combination of sweet and savoury.

INGREDIENTS

4 ripe figs

8 slices Parma ham

75g gorgonzola

100g rocket leaves

drizzle balsamic glaze

drizzle extra virgin olive oil

salt and freshly ground black pepper

METHOD

Preheat oven to 180C

  1. Cut a cross shape into the top of each fig, then gently squeeze the bottom of each fig to open.

  2. Divide the blue cheese among the figs, stuffing the pieces into the top of them.

  3. Wrap two slices of Parma ham around the middle of each fig, leaving the tops uncovered.

  4. Place the prepared figs onto a baking tray and cook for 8-10 minutes, or until the cheese has melted and the Parma ham is crisp.

  5. Divide the rocket leaves on two serving plates. Place two roasted figs on top of each pile of rocket. Drizzle over the balsamic glaze and olive oil. Season with salt and freshly ground black pepper.
