Coronation Chicken

This contemporary coronation chicken is a delicious twist on the classic version. A wonderful lunch, served with new potatoes and dressed salad.

INGREDIENTS

2 tbsp apricot jam
1 tbsp curry powder
300ml mayonnaise
150ml crème fraiche
1 tbsp tomato purée
1 Finely grated lemon zest
Juice of 1 lemon
450g cooked chicken, cut into bite sized pieces
2 spring onions, finely chopped
salt and freshly ground black pepper
175g black and green seedless grapes cut in half lengthways
Rocket leaves to garnish

METHOD
  1. Put the jam and curry powder in a small saucepan and heat gently, stirring until the jam has melted. Set aside to cool.

  2. Put the mayonnaise, crème fraiche and tomato purée in a mixing bowl with the lemon zest and lemon juice. Mix together until combined.

  3. Stir in the jam mixture, add the chicken and spring onions. Season with salt and freshly ground black pepper. Add half the grapes, and stir until combined. Spoon on to a serving platter and garnish with the remaining grapes and rocket.
