Daube de Sanglier

The perfect way to introduce your friends and family to Wild Boar.
This traditional French recipe is a great dish to serve on a cold winter's night.

METHOD

Preheat the oven to 160C.

  1. Heat the olive oil and fry the chopped onion, carrots and celery until soft. Add the lardons and cook for a few more minutes, then add the garlic and cook for a further minute.

  2. Add the wild boar meat and cook until lightly browned.

  3. Add the wine, bouquet garni and tomatoes.

  4. Place in the oven for 2 hours. Check occasionally. Add a little water if necessary.

  5. Serve with creamy mashed potatoes.

INGREDIENTS

1.5kg wild boar meat, diced
75cl bottle red wine
2 tins chopped tomatoes
2 medium onions, finely diced
1 stick of celery, finely diced
6 carrots, peeled and diced
3 or 4 cloves of garlic, finely sliced
1 bouquet garni
200g lardons
3 tbsp olive oil
